Nettle Soup
Nettles are at their very best right now! Young, juicy and full of antioxidants, nettles also help improve liver and kidney function.
Collect a football sized bag of fresh young nettle leaves. Wash the leaves and trim the stalks.
Sautée a large onion, some finely chopped garlic and 2 or 3 chopped spuds in olive oil, until the onions are translucent and the spuds starting to crisp, then drop in the nettles and stir well.
Add 1 litre of vegetable stock and simmer ‘til spuds are soft.
Add salt and black pepper and blend.
And just to be really healthy, swirl a twirl of crème fraiche into each bowl of soup just before serving!
